Potted Shrimp Appetizers Recipe

Among the delicious appetizers I enjoyed while in England making Prescription for Murder with Marius Goring, is Potted Shrimp, which is also terrific spread on little triangles of toast with cocktails.

Utensils needed:

mixing bowl
4 ramekins (or in their absence use empty tuna cans)

Ingredients:

2 cups cooked and shelled shrimp*
Salt and pepper
½ t. ground mace
1 C butter, melted
¼ t. ground nutmeg
Lettuce leaves Parsley

Mix shrimp, spices, and salt and pepper to taste and pack firmly into ramekins. Pour enough melted butter over them to cover, refrigerate. Either serve in remekins on plate garished with parsley, or unmold on piece of lettuce, butter lettuce preferred.

*Note: I use tiny cooked bay shrimp, but if they’re not available, use larger shrimp and cut into medium dice.
